Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease an 8x8 inch baking pan.
  2. Combine softened unsalted butter and light brown sugar in a mixing bowl, and beat until light and fluffy.
  3. Add pumpkin puree, egg, and vanilla extract to the mixture and blend until just combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually fold into wet ingredients.
  5. Stir in semisweet chocolate chips, reserving some for topping later.
  6. Spread ¾ of the cookie dough into the pan, top with marshmallow fluff or mini marshmallows, and drop remaining dough on top.
  7. Bake for 25-30 minutes until a toothpick comes out mostly clean.
  8. Allow to cool in the pan for about 15-20 minutes before cutting into squares.
