- Preheat your oven to 375°F (190°C) and grease an 8x8 inch baking pan.
- Combine softened unsalted butter and light brown sugar in a mixing bowl, and beat until light and fluffy.
- Add pumpkin puree, egg, and vanilla extract to the mixture and blend until just combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually fold into wet ingredients.
- Stir in semisweet chocolate chips, reserving some for topping later.
- Spread ¾ of the cookie dough into the pan, top with marshmallow fluff or mini marshmallows, and drop remaining dough on top.
- Bake for 25-30 minutes until a toothpick comes out mostly clean.
- Allow to cool in the pan for about 15-20 minutes before cutting into squares.
