- Preheat your oven to 350°F (175°C). Line a 9-inch square baking pan with foil and grease it lightly.
- In a microwave-safe bowl, melt together the semi-sweet chocolate chips and unsalted butter in 30-second intervals until smooth.
- Whisk in the granulated sugar until combined, then add eggs one at a time, mixing until the batter is shiny and smooth.
- Sift together all-purpose flour, baking powder, and salt, and then fold them into the chocolate mixture along with food coloring and vanilla.
- Pour the batter into the prepared pan and smooth the top. Bake for 44–48 minutes and check for doneness.
- Cool the brownies completely on a wire rack in the pan for about 2 hours.
- In a mixing bowl, beat together softened cream cheese and butter until smooth, then add powdered sugar and salt, mixing until light and fluffy.
- Once cooled, remove the brownies from the pan and spread the cream cheese frosting evenly on top.
- Slice into 16 squares and serve chilled or at room temperature.
