  • 1 tablespoon vegetable oil Coconut oil is a great substitute.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together softened unsalted butter and granulated sugar until light and fluffy.
  4. Beat in the large egg and vanilla extract until fully combined.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges turn lightly golden. Let them cool on the baking sheet.
  8. Gently press an indentation into the center of each cookie after cooling.
  9. Fill each indentation with vanilla custard using a piping bag or small spoon.
  10. Melt semi-sweet chocolate chips and vegetable oil in a microwave-safe bowl.
  11. Drizzle the melted chocolate over filled cookies and let set for 10-15 minutes.
