  2. Roll Out Puff Pastry: Roll thawed puff pastry into a 12x16 inch rectangle, keeping it cold for easy handling.
  3. Fill Pastry: Spread goat cheese over half of the pastry, dollop with blackberry jam, fold and cut into 12 strips.
  4. Twist Strips: Fold each strip in half and twist, laying on a parchment-lined baking sheet.
  5. Add Toppings: Brush with egg wash, mix lemon zest, raw sugar, and thyme, then sprinkle over twists.
  6. Bake: Preheat oven to 400°F and bake for 16-18 minutes until golden. Cool for 5 minutes before serving.
