  • 10 Guajillo Chiles deseeded
  • 5 Ancho Chilies deseeded
  • 3 Arbol Chilies use less for less heat
  • 2 Roma Tomatoes roasted
  • 1 White Onion quarter for even cooking
  • 6 Garlic Cloves unpeeled
For Cooking Liquid
  • 2 cups Low-Sodium Beef Broth or vegetable broth for vegetarian
  • 2 tablespoons Apple Cider Vinegar
Spices and Seasoning
  • 2 teaspoons Kosher Salt to taste
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Mexican Oregano or marjoram
  • ½ teaspoon Ground Cloves
  • ½ teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Ginger
  • 3 Bay Leaves remove before serving

Step‑by‑Step Instructions
  1. Begin by prepping the chilies. Slice off the stems and remove the seeds. Place in a pot with water, bring to a simmer for 15 minutes, then set aside.
  2. Preheat the broiler. Arrange tomatoes, onion, and garlic on a baking sheet. Broil for 4-6 minutes until charred.
  3. In a blender, combine softened chilies, roasted vegetables, broth, vinegar, and spices. Blend until smooth.
  4. Place beef in a slow cooker, pour the sauce over, and cook on low for 8-9 hours or high for 4-5 hours.
  5. Shred the beef in the slow cooker, mixing it back into the sauce.
  6. Serve birria in bowls or tacos, garnished with onion, cilantro, and lime.
