Preparation
  1. In a large mixing bowl, combine cornstarch, salt, black pepper, garlic powder, and paprika. Coat chicken evenly with the mixture and set aside for 10 minutes.
  2. Heat ½ inch of vegetable oil in a large skillet over medium-high heat. Fry coated chicken for 5-7 minutes until golden brown and crisp.
  3. Whisk together mayonnaise, sweet chili sauce, and sriracha in a small bowl.
  4. Prepare jasmine rice according to package instructions.
  5. In a serving bowl, layer fluffy jasmine rice, crispy fried chicken, and top with shredded lettuce, cucumber, carrots, and green onions.
  6. Drizzle the spicy mayo sauce generously over the assembled bowl.
