Ingredients

  • 2 tablespoons maple syrup
  • 1/4 cup coconut aminos
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon arrowroot powder
  • 1 teaspoon red pepper flakes optional
For the Filling
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 medium red bell pepper diced
  • 1 cup shredded carrots
  • 3 each green onions sliced
  • to taste teaspoon kosher salt
  • to taste teaspoon black pepper
  • 1 tablespoon sesame seeds for garnish
For the Wraps
  • 1 head Boston Bibb lettuce for wrapping
  • steamed white rice optional, for serving
  • sautéed cauliflower rice optional, for serving

Method
 

Instructions
  1. In a measuring cup, whisk together the sauce ingredients until well combined and set aside.
  2. Heat olive oil in a skillet over medium-high heat and cook ground beef until browned, about 5 minutes.
  3. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  4. Stir in diced red bell pepper and shredded carrots, cooking for 3-4 minutes.
  5. Pour the sauce into the skillet, mix well, and simmer for 2-3 minutes.
  6. Remove from heat and fold in sliced green onions, adding salt and pepper to taste.
  7. Spoon the filling into lettuce leaves and garnish with sesame seeds before serving.
