  • 2 cups All-Purpose Flour
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1 teaspoon Salt
  • 1 tablespoon Baking Powder
  • 2 large Eggs
  • 1 cup Sugar Can be adjusted based on personal preference
  • 1/2 cup Vegetable Oil
  • 1/2 cup Applesauce
  • 1 teaspoon Vanilla Extract
  • 2 cups Peeled Apples, chopped Granny Smith or Honeycrisp recommended
  • 1 cup Chopped Toasted Pecans Can substitute walnuts or almonds
For the Topping
  • 1 tablespoon Sugar
  • 1 teaspoon Cinnamon

Method
 

Baking Process
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. Whisk together flour, cinnamon, nutmeg, salt, and baking powder in a medium bowl.
  3. In a large mixing bowl, combine eggs, sugar, vegetable oil, applesauce, and vanilla extract and mix until well blended.
  4. Fold the dry ingredients into the wet ingredients until just combined, being careful not to over-mix.
  5. Gently fold in the chopped apples and half of the toasted pecans.
  6. Pour the batter into the greased loaf pan and smooth the top with a spatula.
  7. Mix the remaining pecans with sugar and cinnamon, then sprinkle over the batter.
  8. Bake in the preheated oven for 55-60 minutes, or until a toothpick comes out clean.
  9. Remove from oven and let cool in the pan for 10-15 minutes before inverting to cool completely.
