Baking Process
- Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
- Whisk together flour, cinnamon, nutmeg, salt, and baking powder in a medium bowl.
- In a large mixing bowl, combine eggs, sugar, vegetable oil, applesauce, and vanilla extract and mix until well blended.
- Fold the dry ingredients into the wet ingredients until just combined, being careful not to over-mix.
- Gently fold in the chopped apples and half of the toasted pecans.
- Pour the batter into the greased loaf pan and smooth the top with a spatula.
- Mix the remaining pecans with sugar and cinnamon, then sprinkle over the batter.
- Bake in the preheated oven for 55-60 minutes, or until a toothpick comes out clean.
- Remove from oven and let cool in the pan for 10-15 minutes before inverting to cool completely.
