- In a large bowl or ziplock bag, combine 2 pounds of chicken wings with peanut oil, Shaoxing wine, soy sauce, ground ginger, salt, sugar, garlic powder, and white pepper. Massage the mixture into the wings to ensure they’re evenly coated. For the best flavor, marinate the wings overnight or let them sit for at least 2 hours at room temperature while you prepare the rest.
- While the wings are marinating, preheat your air fryer to 350°F (176°C).
- Once the wings are marinated, drain them and pat them dry to remove excess marinade. In a separate bowl, mix cornstarch and all-purpose flour together. Coat each wing thoroughly with this mixture.
- Arrange the prepared wings skin-side down in the air fryer basket in a single layer. Lightly spray the wings with oil to enhance crispiness. Close the air fryer and set the timer to cook for 12-15 minutes, flipping them halfway through.
- After the initial cooking time, check the wings for a golden color and crispy texture.
- Once the wings are perfectly golden and crispy, carefully remove them from the air fryer and let them sit for a couple of minutes before serving.
