Steps
- Slice the flank steak into thin strips, about 1/4 inch thick. In a bowl, combine steak with chili powder, salt, cumin, garlic powder, onion powder, and coriander. Toss to coat.
- Select the sauté mode on the Instant Pot and heat avocado oil. Add the seasoned steak and brown for 1-2 minutes. Cancel sauté after browning.
- Add the sliced green and red bell peppers, jalapeño, diced red onion, and minced garlic. Pour in beef broth and stir in tomato paste.
- Secure the lid on your Instant Pot. Set to high pressure and cook for 7 minutes.
- Perform a quick release by moving the steam valve to venting after cooking time is complete.
- Serve over cauliflower rice or salad greens, and top with avocado or sour cream if desired.
