Ingredients
  

Steak Marinade
  • 1.5 lbs Flank Steak Can substitute with sirloin steak or chicken
  • 2 Tbsp Chili Powder Use mild variety for less heat
  • 1.5 tsp Salt Adjust according to dietary needs
  • 1 tsp Cumin Omit if not available
  • 1 tsp Garlic Powder Substitue with fresh minced garlic if preferred
  • 1/2 tsp Onion Powder Substitute with fresh onion if desired
  • 1/4 tsp Coriander Can be omitted
  • 2 Tbsp Avocado Oil Substitute with olive oil if needed
Vegetables
  • 2 Green Bell Peppers Sliced
  • 2 Red Bell Peppers Sliced
  • 1/2 Jalapeño Sliced
  • 1/2 cup Red Onion Diced
  • 3 cloves Garlic Minced
Sauce and Base
  • 1/2 cup Beef Broth Substitute with vegetable broth for vegetarian option
  • 2 Tbsp Tomato Paste Can use diced fresh tomatoes if needed

Method
 

Steps
  1. Slice the flank steak into thin strips, about 1/4 inch thick. In a bowl, combine steak with chili powder, salt, cumin, garlic powder, onion powder, and coriander. Toss to coat.
  2. Select the sauté mode on the Instant Pot and heat avocado oil. Add the seasoned steak and brown for 1-2 minutes. Cancel sauté after browning.
  3. Add the sliced green and red bell peppers, jalapeño, diced red onion, and minced garlic. Pour in beef broth and stir in tomato paste.
  4. Secure the lid on your Instant Pot. Set to high pressure and cook for 7 minutes.
  5. Perform a quick release by moving the steam valve to venting after cooking time is complete.
  6. Serve over cauliflower rice or salad greens, and top with avocado or sour cream if desired.
