Ingredients
  

For the Crust
  • 200 g Biscoff Cookies Crushed
  • 150 g Unsalted Butter Melted
For the Crumble Topping
  • 55 g Unsalted Butter Melted
  • 50 g All-Purpose Flour
  • 50 g Brown Sugar
  • 20 g Rolled Oats
For the Filling
  • 3 pieces Tart Apples Granny Smith, Honeycrisp, Gala
  • 100 g Greek Yogurt
  • 2 tsp Vanilla Extract
  • Spices (Cinnamon, Ginger, Nutmeg)
  • 3 large Eggs
For the Apple Mixture
  • 50 g Brown Sugar
  • Cornstarch

Method
 

Crust Preparation
  1. Crush 200g of Biscoff cookies into fine crumbs. Melt 150g of unsalted butter and combine with cookie crumbs. Press into a 9-inch springform pan and chill for 30 minutes.
Crumble Topping Preparation
  1. Mix melted butter, flour, and brown sugar. Add rolled oats, stir until crumbly. Set aside.
Apple Preparation
  1. Peel and slice 3 tart apples. Sauté with 50g brown sugar, sprinkle of cinnamon, and cornstarch for 6-8 minutes. Let cool.
Cheesecake Filling Preparation
  1. Beat cream cheese and sugar until smooth. Mix in yogurt, vanilla, spices, then incorporate eggs one at a time.
Assemble and Bake
  1. Pour cheesecake filling into crust, add apple mixture on top, and sprinkle crumble topping. Bake at 325°F for 65-70 minutes.
Cooling and Chilling
  1. Cool in oven for 1 hour, then refrigerate for at least 6 hours or overnight before serving.
