Equipment

  • Air Fryer

Method

Step-by-Step Instructions
  1. In a mixing bowl, whisk together coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, lime juice, turmeric powder, and chili powder to create a vibrant marinade. Coat the boneless skinless chicken thighs thoroughly in the mixture, ensuring each piece is well-covered. Allow the chicken to marinate in the refrigerator for at least 1 hour or, for a richer flavor, overnight.
  2. While the chicken marinates, preheat your air fryer to 375°F (190°C). Allow the air fryer to run for about 5 minutes to ensure it has fully reached the desired temperature before adding the chicken.
  3. Place the marinated chicken thighs into the preheated air fryer basket in a single layer. Cook the chicken for 15 minutes. Then, flip each thigh and continue cooking for an additional 10-15 minutes, or until the chicken reaches a golden-brown color and an internal temperature of 165°F (75°C).
  4. Once cooked, carefully remove the chicken thighs from the air fryer using tongs. Transfer them to a serving platter, and garnish generously with fresh coriander. Serve warm, paired with jasmine rice and sautéed vegetables.
