- Preheat your oven to 425°F (220°C) and line a baking pan with parchment paper.
- Rinse, dry, and peel your carrots before cutting them into diagonal 1½ inch pieces.
- In a large mixing bowl, combine the chopped carrots with olive oil, honey, minced garlic, salt, black pepper, and dill. Toss until coated.
- Transfer the coated carrots to the prepared baking pan, spreading them evenly in a single layer.
- Place the baking pan in the oven and roast the carrots for 20-25 minutes, checking for doneness at the 15-minute mark.
- Baste the carrots with the reserved liquid from the mixing bowl during the last 5-10 minutes of roasting.
- Transfer the roasted carrots to a serving dish, crumble fresh feta over, drizzle with honey, and garnish with fresh dill before serving.
