  • 1/2 teaspoon Black Pepper
For the Toppings
  • 1/2 cup Feta Cheese Best crumbled fresh.
  • 2 tablespoons Dill Use both fresh and dried.

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and line a baking pan with parchment paper.
  2. Rinse, dry, and peel your carrots before cutting them into diagonal 1½ inch pieces.
  3. In a large mixing bowl, combine the chopped carrots with olive oil, honey, minced garlic, salt, black pepper, and dill. Toss until coated.
  4. Transfer the coated carrots to the prepared baking pan, spreading them evenly in a single layer.
  5. Place the baking pan in the oven and roast the carrots for 20-25 minutes, checking for doneness at the 15-minute mark.
  6. Baste the carrots with the reserved liquid from the mixing bowl during the last 5-10 minutes of roasting.
  7. Transfer the roasted carrots to a serving dish, crumble fresh feta over, drizzle with honey, and garnish with fresh dill before serving.
