Crumb Topping
  • ½ cup rolled oats
  • ¼ cup brown sugar
  • ¼ cup butter use coconut oil for dairy-free

Method
 

Baking Instructions
  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. Cream together softened butter and granulated sugar in a large mixing bowl until fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, salt, and ground cinnamon.
  5. Gradually add dry ingredients to wet mixture, alternating with milk, until well blended.
  6. Gently fold in chopped fresh peaches.
  7. In a small bowl, mix brown sugar, rolled oats, and melted butter to form crumb topping.
  8. Fill cupcake liners two-thirds full with batter and sprinkle crumb topping generously.
  9. Bake for 18-20 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack.
