- Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by lining it with parchment paper or greasing it.
- In a mixing bowl, beat together 1 cup of softened butter and 1 cup of granulated sugar until light and fluffy. In another bowl, whisk 2 cups of flour, 1 teaspoon of cinnamon, and salt. Gradually add to the butter mixture.
- Transfer the crust mixture into the baking dish and spread it evenly. Bake for about 15 minutes until lightly golden.
- Prepare the apple filling by peeling and slicing about 6 cups of apples. Mix with 1/2 cup of sugar, 2 tablespoons of flour, and 1 teaspoon of cinnamon.
- In another bowl, combine 1 cup of oats, 1 cup of brown sugar, 1/2 cup of flour, and 1 teaspoon of cinnamon. Cut in 1/2 cup of cold butter until crumbly.
- Spread the apple filling over the baked crust, then sprinkle the streusel topping generously over the apples.
- Return to the oven and bake for an additional 45 minutes until the topping is golden brown and apples are tender.
- Allow the bars to cool completely in the dish before cutting into squares.
