- Cook bacon in a large skillet over medium heat until crispy, about 5–7 minutes. Remove and set aside, leaving drippings in the skillet.
- Sauté diced onions in the bacon drippings for about 3–4 minutes until translucent. Add minced garlic and cook for another 1–2 minutes.
- Add chicken pieces to the skillet and cook for about 6–8 minutes until browned and cooked to 165°F (74°C). Remove chicken and set aside.
- Stir in sweet potatoes and Brussels sprouts into the skillet. Season with salt, black pepper, cinnamon, and nutmeg. Cover and cook for 10–12 minutes.
- Add diced apple, walnuts, and dried cranberries along with a splash of chicken broth. Stir and simmer for an additional 5 minutes.
- Return cooked bacon to the skillet, sprinkle fresh thyme on top, and mix gently. Cook for another 2 minutes until heated through.
