Step-by-Step Instructions
  1. Cook bacon in a large skillet over medium heat until crispy, about 5–7 minutes. Remove and set aside, leaving drippings in the skillet.
  2. Sauté diced onions in the bacon drippings for about 3–4 minutes until translucent. Add minced garlic and cook for another 1–2 minutes.
  3. Add chicken pieces to the skillet and cook for about 6–8 minutes until browned and cooked to 165°F (74°C). Remove chicken and set aside.
  4. Stir in sweet potatoes and Brussels sprouts into the skillet. Season with salt, black pepper, cinnamon, and nutmeg. Cover and cook for 10–12 minutes.
  5. Add diced apple, walnuts, and dried cranberries along with a splash of chicken broth. Stir and simmer for an additional 5 minutes.
  6. Return cooked bacon to the skillet, sprinkle fresh thyme on top, and mix gently. Cook for another 2 minutes until heated through.
