Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40-45 minutes, stirring halfway through.
  3. Heat a tablespoon of olive oil in a skillet over medium heat. Add diced onion and sauté for about 5-7 minutes until soft and translucent.
  4. Add lean ground beef to the skillet with the softened onions and taco seasoning. Cook for 8-10 minutes until browned and fully cooked through.
  5. Assemble the bowls by layering roasted sweet potatoes at the bottom, then spooning the taco-seasoned ground beef over the potatoes.
  6. Top with sliced avocado and a scoop of cottage cheese, creating colorful layers.
  7. Drizzle hot honey over the assembled ingredients before serving.
