Ingredients
  

Pasta Base
  • 1 pound Rotini Pasta Cook al dente
Meats
  • 1 cup Oven Roasted Turkey Substitute with leftover chicken or ham
  • 1 cup Pepperoni Can swap with other cured meats
  • 1 cup Salami Omit for a lighter version
Cheeses
  • 1 cup Provolone Cheese Mozzarella can replace for a milder taste
  • 1/2 cup Parmesan Cheese Freshly grated is ideal
Veggies
  • 2 cups Iceberg Lettuce Romaine or spinach are alternatives
  • 1 cup Cherry Tomatoes Diced bell peppers can be used if unavailable
  • 1/2 cup Pepperoncinis Jalapeños can be used for spicy kick
  • 1 medium Red Onion Green onions can be used for milder flavor
Dressing
  • 1 cup Mayonnaise Homemade or store-bought
  • 1/4 cup Red Wine Vinegar Apple cider vinegar can be used
  • 2 tablespoons Pepperoncini Juice Optional but recommended
  • 1 teaspoon Dried Oregano Fresh oregano can be used but increase quantity slightly
  • 2 cloves Garlic Fresh garlic is best
  • to taste Salt
  • to taste Black Pepper

  • Large Pot
  • medium-sized measuring cup
  • large mixing bowl
  • colander

Method
 

Making the Salad
  1. In a medium-sized measuring cup, whisk together the mayonnaise, red wine vinegar, pepperoncini juice, dried oregano, minced garlic, and a pinch of salt and black pepper until smooth. Cover and chill.
  2. Bring a large pot of salted water to a rolling boil, then add the rotini pasta. Cook for about 9–10 minutes until al dente. Drain and rinse under cold water.
  3. Chop the oven-roasted turkey, pepperoni, and salami into bite-sized pieces. Slice the provolone cheese and prepare the vegetables.
  4. In a large mixing bowl, add the cooled rotini, chopped meats, cubed cheeses, and sliced vegetables. Pour the chilled dressing over the top and toss to combine.
  5. Cover the bowl with plastic wrap and chill for at least 2 hours before serving.

Notes

For best results, chop all ingredients into similar sizes and allow for adequate chill time to enhance the flavors.
