Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together the freshly squeezed lime juice and lime zest with the honey until smooth and well combined.
  2. Preheat your outdoor grill or an indoor grill pan to high heat, trim both ends of the watermelon, cut in half lengthwise, then slice each half into quarters and cut into 1-inch thick triangles.
  3. Brush both sides of each watermelon triangle with the honey-lime mixture and grill for about 2-3 minutes on each side until grill marks appear.
  4. Remove the watermelon from the grill, transfer to a platter, sprinkle with cilantro, and drizzle with extra lime juice before serving.
