  1. Prepare the sea bass by rinsing the fillets, patting them dry, lightly scoring the skin, and seasoning with salt and pepper. Let rest for 10 minutes.
  2. Heat a grill pan over medium-high heat, add olive oil, place the sea bass skin-side down, and grill for 3–4 minutes. Flip and cook for another 2–3 minutes.
