Step-by-Step Instructions
  1. In a bowl, whisk together olive oil, fresh lime juice, cumin, salt, and pepper. Coat chicken breasts thoroughly in the marinade and let them marinate for at least 30 minutes.
  2. Preheat your grill on medium-high heat, approximately 375°F to 400°F. Grill the marinated chicken breasts for 6-7 minutes per side until cooked through.
  3. Prepare rice according to package instructions for about 15-20 minutes until tender.
  4. In a saucepan over medium heat, combine rinsed black beans and diced bell peppers. Cook for about 5 minutes until peppers are tender.
  5. Slice the grilled chicken against the grain into strips. In serving bowls, layer rice, black beans and peppers, and top with grilled chicken.
  6. Sprinkle shredded cheese over warm food to melt slightly, then add avocado, cilantro, and salsa.
