Step‑by‑Step Instructions
  1. Marinate the Chicken: Cut chicken thighs into bite-sized pieces. In a bowl, combine olive oil, soy sauce, honey, minced garlic, smoked paprika, salt, and black pepper. Toss chicken in the marinade, cover, and refrigerate for 30 minutes.
  2. Prepare the Creamy Garlic Sauce: Whisk together mayonnaise, Dijon mustard, minced garlic, lemon juice (or vinegar), and a pinch of salt until smooth. Cover and refrigerate to chill.
  3. Skewer the Chicken (Optional): Thread marinated chicken pieces onto skewers, leaving space between them. Preheat grill for optimal marks.
  4. Grill the Chicken Bites: Preheat grill to medium-high. Grill chicken bites (or skewers) for 4–5 minutes per side until golden brown and 165°F internal temperature is reached.
