- Preheat your oven to 400°F (200°C). Roast the garlic by slicing off the top, drizzling with olive oil, wrapping it in foil, and roasting for 30-35 minutes until soft and golden brown.
- Heat a pan over medium heat with a splash of olive oil. Add the chopped spinach and sauté for 2-3 minutes until wilted, seasoning with salt and pepper.
- Let the roasted garlic cool slightly, then squeeze the cloves into a bowl. Mash with ricotta cheese, half of the mozzarella, oregano, and seasoning to create a creamy mixture.
- Roll out the pizza crust on a baking sheet. Spread the garlic-ricotta mixture, layer the sautéed spinach, then top with the remaining mozzarella and feta cheese.
