- Preheat your oven to 425°F (220°C).
- Roll out the thawed puff pastry on a lightly floured surface and cut into eight 5-inch circles.
- Score a ¼-inch border around each pastry circle without cutting through.
- Spoon approximately 2 tablespoons of goat cheese into the center of each pastry and season with salt and pepper. Sprinkle with Herbs De Provence.
- Distribute chopped walnuts on top and drizzle honey over each tart.
- Whisk together an egg with a teaspoon of warm water and brush the mixture around the outer border of each pastry.
- Place tarts on a lined baking sheet and bake for about 20 minutes until puffed and golden brown.
- Let cool slightly and garnish each tart with a sprig of thyme and a drizzle of honey.
