- Wash and halve the baby potatoes. Mince the garlic, then rub the chicken breasts with olive oil and season with Italian spices, salt, pepper, and red pepper flakes.
- Arrange the halved baby potatoes at the bottom of the crockpot. Layer the seasoned chicken breasts on top.
- Pour chicken broth over the chicken and potatoes. Sprinkle minced garlic and parmesan cheese on top.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken reaches 165°F and potatoes are fork-tender.
- Carefully remove the chicken and potatoes to serve. Spoon sauce over them and garnish with parsley if desired.
