For the Potatoes
  • 1.5 pounds Baby Potatoes
  • 2 tablespoons Olive Oil
For Flavoring
  • 1 cup Chicken Broth
  • 1 tablespoon Italian Seasoning
  • 1 cup Parmesan Cheese Grated
For Garnish
  • 1/4 cup Fresh Parsley Chopped, optional

Method
 

Step-by-Step Instructions
  1. Wash and halve the baby potatoes. Mince the garlic, then rub the chicken breasts with olive oil and season with Italian spices, salt, pepper, and red pepper flakes.
  2. Arrange the halved baby potatoes at the bottom of the crockpot. Layer the seasoned chicken breasts on top.
  3. Pour chicken broth over the chicken and potatoes. Sprinkle minced garlic and parmesan cheese on top.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken reaches 165°F and potatoes are fork-tender.
  5. Carefully remove the chicken and potatoes to serve. Spoon sauce over them and garnish with parsley if desired.
