  • 1/4 cup Fresh Parsley finely chopped
  • 3 cloves Minced Garlic fresh is preferred
  • 1 large Egg beaten
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Fine Sea Salt adjust to taste
  • 1/2 teaspoon Freshly Ground Black Pepper adjust to preference
  • 1/2 cup Whole Milk
For Finishing Touch
  • 2 tablespoons Extra Virgin Olive Oil for drizzling
  • 1 cup Grated Mozzarella Cheese optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, grated Parmesan, breadcrumbs, parsley, minced garlic, beaten egg, oregano, salt, and pepper. Mix well until combined.
  3. Gently add the whole milk to the mixture and mix until the consistency is even and slightly moist.
  4. Divide the mixture into four portions and shape into mini loaves about 3 inches long on the prepared baking sheet.
  5. Drizzle olive oil over each meatloaf and sprinkle with grated mozzarella cheese if desired.
  6. Bake in the preheated oven for 25 to 30 minutes, or until golden brown and internal temperature reaches 74°C (165°F).
  7. Let the meatloaves rest for about 5 minutes before serving.
