Preparation Steps
  1. Start by gathering all your ingredients for Garlic Butter Beef Bites & Potatoes. Cut the beef stew meat into bite-sized pieces, approximately 1-inch cubes. Halve the baby potatoes to ensure they cook evenly and become tender. If you prefer, parboil the halved potatoes in boiling water for about 5 minutes to speed up the cooking process later on.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the beef pieces in a single layer, searing them for about 3–4 minutes until each side is nicely browned.
  3. While the beef is searing, prepare the garlic butter sauce. In a medium bowl, combine ½ cup of melted unsalted butter, 4 cloves of minced garlic, 1 teaspoon of onion powder, 1 teaspoon of smoked paprika, and a pinch of salt and black pepper. Stir in 1 teaspoon each of dried thyme and rosemary, mixing until well incorporated.
  4. Once the beef is browned, transfer it to a slow cooker along with the halved baby potatoes. Pour the prepared garlic butter sauce over the top, ensuring everything is coated. Pour in 1 cup of beef broth.
  5. Cover the slow cooker with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  6. When the cooking time is up, carefully remove the lid and let the dish rest for about 10 minutes before serving.
