Step-by-Step Instructions
  1. Begin by cutting the beef stew meat into bite-sized pieces, ensuring they are uniform for even cooking. Next, halve the baby potatoes, which will absorb the rich sauce beautifully. For quicker cooking, you can parboil the potatoes for about 5 minutes.
  2. In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the seasoned beef pieces and brown them on all sides for about 5-7 minutes.
  3. While the beef sears, melt the butter in a mixing bowl. Stir in the minced garlic, onion powder, smoked paprika, dried thyme, dried rosemary, and season with salt and pepper.
  4. In your slow cooker (set on low), combine the halved potatoes and seared beef. Pour the garlic butter sauce over them and then pour in the beef broth.
  5. Cover the slow cooker with its lid and set it to low heat for 6-8 hours or high heat for 3-4 hours.
