Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 tablespoon of granulated sugar, and a pinch of salt. Whisk until evenly mixed.
  2. In a separate bowl, whisk together 1 cup of milk, 2 large room-temperature eggs, and 1 teaspoon of vanilla extract until smooth.
  3. Pour the wet ingredients into the bowl of dry ingredients. Stir gently until just combined.
  4. Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Use a thermometer for accuracy.
  5. Using a tablespoon, scoop batter into the hot oil. Fry for about 2–3 minutes on each side, until golden brown.
  6. Remove from oil using a slotted spoon and place on paper towels to drain excess oil.
