  • 1/4 cup Fresh Cilantro Use parsley if cilantro is not preferred
  • 1 each Jalapeño Pepper Remove seeds for milder flavor
  • 2 tbsp Lime Juice Fresh lime juice recommended
  • 1 tbsp Honey Can replace with agave for vegan option
  • 1/2 tsp Salt Kosher or sea salt recommended

Method
 

Preparation Steps
  1. Wash and dry the ripe peaches, remove the pits, then dice them into 1/4 inch pieces.
  2. Finely dice the red bell pepper and red onion, and mince the jalapeño according to heat preference.
  3. In a large bowl, combine diced peaches, red bell pepper, red onion, and minced jalapeño.
  4. Chop the fresh cilantro and add it to the mixture, stirring gently to combine.
  5. In a small bowl, whisk together lime juice, honey, and salt.
  6. Pour the dressing over the salsa mixture and gently toss to coat.
  7. Allow the salsa to rest for about 10 minutes before serving.
