For the Dressing

Method
 

Combine Ingredients
  1. In a large mixing bowl, add 2 cups of sliced English cucumbers, 1.5 cups of halved cherry tomatoes, and 1 thinly sliced red onion. Toss gently until evenly distributed.
Prepare the Dressing
  1. In a small bowl, whisk together ¼ cup of apple cider vinegar, 2 tablespoons of extra virgin olive oil, 1 tablespoon of sugar, 1 teaspoon of salt, ¼ teaspoon of black pepper, and ½ teaspoon of oregano until smooth.
Combine Salad and Dressing
  1. Pour the dressing over the vegetable mixture and toss until well coated.
Chill Time
  1. Cover the bowl and refrigerate for at least 30 minutes, allowing flavors to meld.
Garnish
  1. Before serving, stir and sprinkle with freshly chopped parsley or dill.
