For the Chicken Marinade
  • 1.5 pounds boneless skinless chicken thighs consider chicken breasts for a leaner option
  • 1 cup 1% plain Greek yogurt non-dairy yogurt for lactose-free alternative
  • 3 tablespoons olive oil avocado oil is a tasty substitute
  • 2 tablespoons red wine vinegar lemon juice works well as a substitute
  • 3 cloves garlic use fresh for maximum flavor
  • 1 teaspoon dried oregano swap with Italian seasoning if necessary
  • 0.5 teaspoon ground turmeric can be omitted if needed
  • 1 teaspoon kosher salt sea salt is a great alternative
  • a pinch red pepper flakes leave out for a milder taste
  • 1 teaspoon freshly cracked black pepper pre-ground can be used
For the Salad
  • 1 cup Persian cucumbers regular cucumbers can substitute
  • 1 cup cherry tomatoes regular tomatoes can replace them
  • 0.5 medium red onion scallions offer a milder flavor swap
  • 1 cup cooked quinoa brown rice or couscous can be used instead
For Toppings
  • 1 cup Skinny Tzatziki homemade or store-bought
  • 0.5 cup feta cheese any cheese in brine can work

Method
 

Preparation
  1. In a mixing bowl, combine the Greek yogurt, olive oil, red wine vinegar, minced garlic, dried oregano, ground turmeric, kosher salt, and red pepper flakes. Whisk until smooth.
  2. Add the chicken thighs to the marinade, ensuring each piece is thoroughly coated. Cover and marinate for at least 10 minutes, preferably 1–2 hours.
  3. While the chicken marinates, prepare the salad by washing and slicing the cucumbers, halving the cherry tomatoes, and thinning slicing the red onion.
  4. In a separate bowl, toss the cucumbers, tomatoes, onion with olive oil, vinegar, kosher salt, and black pepper.
  5. Preheat a skillet or grill pan over medium-high heat. Cook the marinated chicken thighs for 6–8 minutes per side until golden brown and fully cooked.
  6. Let the chicken rest before slicing to retain its juices. Assemble bowls with cooked quinoa, salad, sliced chicken, tzatziki, feta cheese, and olives.
