  1. In a large bowl, whisk together gochujang, gochugaru, soy sauce, honey, sesame oil, minced garlic, grated ginger, and rice vinegar until smooth. Add the chicken thighs, tossing to coat. Cover and marinate for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat (about 375°F). Remove the chicken from the marinade and cook for 4-5 minutes per side until charred and cooked through. Let them rest.
  3. In a separate bowl, combine the shredded cabbage, mayonnaise, sriracha, honey, and rice vinegar for the slaw and mix until well coated.
  4. Toast the brioche buns cut-side down in the grill or skillet for 2-3 minutes until golden brown.
