  • 1 tablespoon Fresh Thyme
  • 1 tablespoon Fresh Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Roasting Vegetables
  • 1 large Onion Can be swapped for shallots.
  • 2-3 medium Carrots Substitute with other root vegetables if desired.
  • 1 lb Potatoes Small or medium.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels.
  2. Season the chicken inside and out with salt and black pepper.
  3. In a bowl, mix olive oil, minced garlic, chopped herbs, and juice/zest of 2 lemons to make the marinade.
  4. Rub the marinade all over the chicken and let it rest for 15 minutes.
  5. Chop onion, carrots, and potatoes into 1-inch pieces and toss with olive oil.
  6. Place the marinated chicken in a roasting pan and surround it with vegetables.
  7. Roast in the oven for about 1 hour and 20 minutes until golden brown and cooked through.
  8. Baste the chicken with pan juices halfway through cooking.
  9. Let the chicken rest for 10-15 minutes before carving.
  10. Slice the chicken and serve alongside roasted vegetables.
