Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In the greased baking dish, combine diced chicken with lemon juice, olive oil, and all dried herbs and spices. Mix thoroughly and marinate for at least 30 minutes.
  3. After marination, scatter uncooked rice evenly in the dish, then mix in grated zucchini. Pour chicken broth over the mixture.
  4. Cover the dish tightly with aluminum foil and bake for 40 minutes.
  5. After 40 minutes, remove the foil and check the rice's tenderness. Return to the oven uncovered for an additional 5-10 minutes if needed.
  6. Fluff the rice with a fork, taste for seasoning, and serve topped with tzatziki sauce, fresh herbs, and a squeeze of lemon.
