  • 2 large eggs Room temperature

For the Streusel Topping
  • 1/2 cup brown sugar Can substitute with more white sugar
  • 1/2 cup oats Adjust or omit based on preference
  • 1/2 cup flour
  • 1/4 cup salted butter Melted
  • 1 teaspoon vanilla extract Using pure will yield best flavor

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine finely chopped walnuts, almond flour, white sugar, and melted butter. Stir until well blended and press into the bottom of the prepared baking dish.
  3. Beat room temperature cream cheese and sugar together until smooth and creamy. Add eggs one at a time, mixing after each addition.
  4. Pour 1.5 cups of the cream cheese mixture over the crust and spread it evenly.
  5. Add pumpkin puree, pumpkin spice, and cinnamon to the remaining cream cheese mixture. Mix until fully combined.
  6. Gently spoon the pumpkin mixture over the white cheesecake layer, smoothing the top with a spatula.
  7. Combine brown sugar, oats, flour, melted butter, and vanilla extract until crumbly. Sprinkle over the pumpkin layer.
  8. Bake for 60-70 minutes until the center is set with a slight jiggle. Let cool slightly.
  9. Refrigerate the bars for at least 2 hours before slicing.
