Step-by-Step Instructions for Biscoff Muffins
  1. Preheat your oven to 180°C (350°F) and prepare a muffin tray with paper liners.
  2. Melt the Biscoff spread in a microwave-safe bowl for 20-30 seconds and let cool.
  3. Whisk together eggs and brown sugar until bubbly and light in color.
  4. Mix in canola oil, buttermilk, melted Biscoff spread, and vanilla until combined.
  5. Sift self-rising flour and speculoos spices into wet ingredients and fold together.
  6. If using, fold in crushed Biscoff cookies gently till evenly distributed.
  7. Fill each muffin liner two-thirds full and swirl in melted Biscoff spread if desired.
