- In a medium bowl, whisk together ½ cup of mayonnaise, ½ cup of sour cream, the juice of one lime, and 1 tablespoon of taco seasoning until smooth and creamy. Cover and chill for 30 minutes.
- In a large mixing bowl, add 4 cups of coleslaw mix, 1 diced red bell pepper, 1 diced orange bell pepper, 1 cup of rinsed and drained black beans, and 1 cup of well-drained corn. Mix gently.
- Remove the chilled dressing from the refrigerator and pour it over the vegetable mixture. Toss gently until well-coated.
- Serve immediately and garnish with additional cilantro, or chill for 30 minutes before serving for enhanced flavors.
