Ingredients

  • 4 cups coleslaw mix fresh mix is recommended
  • 1 cup black beans rinsed and drained
  • 1 cup corn well-drained, canned or frozen
For the Peppers
  • 1 medium red bell pepper diced
  • 1 medium orange bell pepper diced
For the Dressing
  • 1/2 cup mayonnaise high-quality recommended
  • 1/2 cup sour cream low-fat optional
  • 1 medium lime juice freshly squeezed
  • 1 tablespoon taco seasoning homemade version optional
For the Heat
  • 1 medium jalapeño adjust to taste
For the Garnish
  • 1/4 cup cilantro finely chopped, optional

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together ½ cup of mayonnaise, ½ cup of sour cream, the juice of one lime, and 1 tablespoon of taco seasoning until smooth and creamy. Cover and chill for 30 minutes.
  2. In a large mixing bowl, add 4 cups of coleslaw mix, 1 diced red bell pepper, 1 diced orange bell pepper, 1 cup of rinsed and drained black beans, and 1 cup of well-drained corn. Mix gently.
  3. Remove the chilled dressing from the refrigerator and pour it over the vegetable mixture. Toss gently until well-coated.
  4. Serve immediately and garnish with additional cilantro, or chill for 30 minutes before serving for enhanced flavors.
