Ingredients
  

For the Shrimp
  • 1 pound shrimp fresh or thawed frozen
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon smoked paprika adjust to taste
  • 1/2 teaspoon garlic powder adjust to taste
  • 1/2 teaspoon onion powder adjust to taste
  • to taste salt
  • a pinch cayenne pepper adjust to taste
For the Rice Base
  • 1 cup jasmine rice fluffy and fragrant
For the Spicy Mayo
  • 1/2 cup mayonnaise or Greek yogurt
  • 2 tablespoons sriracha adjust based on spice preference
  • 1 tablespoon lime juice or lemon juice
For the Veggies
  • 1 cup shredded carrots for crunch and sweetness
  • 1 medium cucumber sliced
  • 1 medium avocado sliced
  • 2 stalks green onions chopped
For Garnish
  • to taste sesame seeds optional

Method
 

Instructions
  1. Make Spicy Mayo: In a medium mixing bowl, combine ½ cup mayonnaise, 2 tablespoons sriracha, and the juice of 1 lime. Whisk until smooth and creamy. Set it aside.
  2. Cook Jasmine Rice: Rinse 1 cup jasmine rice, then combine with 2 cups water in a medium saucepan. Boil, then reduce heat, cover, and simmer for 15 minutes until tender. Fluff and keep warm.
  3. Prepare Shrimp: Season 1 pound shrimp with spices. Heat 2 tablespoons olive oil in a large skillet. Sauté shrimp for 4-5 minutes until pink and opaque.
  4. Assemble Bowls: In serving bowls, scoop jasmine rice as the base, top with sautéed shrimp, shredded carrots, cucumber, and avocado. Sprinkle green onions on top.
  5. Drizzle and Garnish: Drizzle spicy mayo over the bowls and sprinkle sesame seeds for added crunch.
