Ingredients
  

For the Filling
  • 1 can Canned Crushed Pineapple well-drained
  • 8 oz Cream Cheese full-fat recommended
  • 1 pkg Pineapple Jell-O Powder can substitute with another flavor
For the Coating
  • 1 cup Unsweetened Fine Coconut Flakes or sweetened if preferred
  • 1 cup Graham Cracker Crumbs or crushed vanilla wafers

Method
 

Instructions
  1. Beat the cream cheese until creamy and smooth, about 2-3 minutes.
  2. Combine the well-drained pineapple, half of the coconut flakes, Jell-O powder, and graham cracker crumbs with the cream cheese. Mix until well combined, about 1-2 minutes.
  3. Cover with plastic wrap and refrigerate for at least 1 hour.
  4. Divide the chilled mixture into 24 equal portions and roll into balls.
  5. Roll each ball in the remaining coconut flakes until fully coated.
  6. Store in an airtight container in the refrigerator until ready to serve.
