Preparation Steps
- Preheat your oven to 180°C (350°F) and line a 9x9 inch baking pan with parchment paper.
- In a large mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt.
- Add melted butter, egg, and vanilla to dry ingredients, stirring until a crumbly dough forms.
- Press two-thirds of the dough into the prepared baking pan to create a solid base.
- In another bowl, mix diced peaches with granulated sugar, cornstarch, lemon juice, and cinnamon.
- Spread the peach filling evenly over the crust in the baking pan.
- Crumble the remaining dough over the peach filling for topping.
- Bake for 35-40 minutes until the topping is golden brown and filling is bubbling.
- Allow to cool in the pan before slicing into squares.
