Method
 

Preparation Steps
  1. Preheat your oven to 180°C (350°F) and line a 9x9 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Add melted butter, egg, and vanilla to dry ingredients, stirring until a crumbly dough forms.
  4. Press two-thirds of the dough into the prepared baking pan to create a solid base.
  5. In another bowl, mix diced peaches with granulated sugar, cornstarch, lemon juice, and cinnamon.
  6. Spread the peach filling evenly over the crust in the baking pan.
  7. Crumble the remaining dough over the peach filling for topping.
  8. Bake for 35-40 minutes until the topping is golden brown and filling is bubbling.
  9. Allow to cool in the pan before slicing into squares.
