Preparation Steps
  1. Marinate Chicken: In a medium bowl, combine honey, lime juice, lime zest, garlic, cumin, salt, and pepper. Whisk and coat chicken breasts. Refrigerate for at least 30 minutes.
  2. Prepare Rice: Rinse jasmine rice until water runs clear. Boil chicken broth, stir in rice, cover, reduce heat, and simmer for 15 minutes.
  3. Grill Chicken: Preheat grill. Grill marinated chicken 6–7 minutes each side until reaching 165°F. Let rest, then slice.
  4. Mix Avocado Topping: Dice avocados, chop onion and cilantro, mix with olive oil, and gently combine.
  5. Assemble Stack: Layer rice, sliced chicken, and avocado topping on a plate.
  6. Serve: Garnish with lime wedges and cilantro. Enjoy immediately.
