For the Wrap
  • 1 medium Zucchini substitute with yellow squash for similar texture
  • 1/2 cup Feta Cheese or goat cheese for variation
  • 1 cup Chickpeas opt for canned chickpeas for convenience
  • 2 large Tortillas whole wheat or gluten-free based on diet
For the Herbed Yogurt Sauce
  • 1 cup Greek Yogurt add lemon zest for citrus kick
  • 1 tablespoon Fresh Herbs dill, mint, or parsley
  • 1 pinch Salt season to taste
  • 1 tablespoon Lemon Juice adjust for preferred tanginess

Method
 

Preparation
  1. Begin by washing the zucchini thoroughly and trimming the ends. Slice the zucchini into evenly sized strips, approximately ¼ inch thick.
  2. Preheat your grill to medium-high heat, around 400°F (200°C). Lightly oil the grill grates and place the zucchini strips onto the grill. Cook for about 4–5 minutes per side.
  3. While the zucchini is grilling, prepare the herbed yogurt sauce. Combine Greek yogurt, chopped herbs, a pinch of salt, and lemon juice in a mixing bowl.
  4. Once the zucchini is grilled, take a warm tortilla and spread a layer of the herbed yogurt sauce down the center. Layer on the grilled zucchini, crumbled feta, and chickpeas.
  5. Fold the sides of the tortilla in and roll it tightly from the bottom up. Cut the wrap in half for easier handling and serve immediately.

Notes
