Preparation
- Begin by washing the zucchini thoroughly and trimming the ends. Slice the zucchini into evenly sized strips, approximately ¼ inch thick.
- Preheat your grill to medium-high heat, around 400°F (200°C). Lightly oil the grill grates and place the zucchini strips onto the grill. Cook for about 4–5 minutes per side.
- While the zucchini is grilling, prepare the herbed yogurt sauce. Combine Greek yogurt, chopped herbs, a pinch of salt, and lemon juice in a mixing bowl.
- Once the zucchini is grilled, take a warm tortilla and spread a layer of the herbed yogurt sauce down the center. Layer on the grilled zucchini, crumbled feta, and chickpeas.
- Fold the sides of the tortilla in and roll it tightly from the bottom up. Cut the wrap in half for easier handling and serve immediately.
