  • 1 tablespoon Olive Oil Avocado oil is a great alternative.

For the Broccoli
  • 4 cups Broccoli Florets Can substitute with asparagus or green beans.
For the Creamy Garlic Sauce
  • 2 tablespoons Butter Coconut oil is a dairy-free alternative.
  • 3 cloves Garlic (minced) Fresh garlic is best.
  • 1 cup Heavy Cream Coconut cream can be used for dairy-free.
  • 3/4 cup Grated Parmesan Cheese Nutritional yeast is a substitute.

Method
 

Preparation
  1. Season the boneless skinless chicken breasts with salt and pepper on both sides. Let them sit at room temperature for about 15 minutes.
  2. Preheat your grill pan or outdoor grill to medium-high heat, approximately 400°F (200°C). Grill chicken for 5-6 minutes per side until cooked.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add broccoli florets and sauté for 5-7 minutes until tender.
  4. In a saucepan, melt 2 tablespoons of butter over medium-low heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Pour in 1 cup of heavy cream and bring to a gentle simmer, stirring occasionally for 3-5 minutes.
  6. Whisk in 3/4 cup of grated Parmesan cheese until melted and smooth. Adjust seasoning with salt and pepper.
  7. Slice the grilled chicken into bite-sized pieces. Assemble bowls with sautéed broccoli, chicken, and creamy garlic sauce.
