Ingredients
  

For the Chicken Marinade
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil can substitute with avocado oil
  • 2 tablespoons lemon juice can replace with lime juice
  • 2 cloves garlic (minced) fresh is best
  • 1 teaspoon dried oregano Italian seasoning is a suitable alternative
  • to taste salt & black pepper adjust to taste
For the Bowl Assembly
  • 2 cups cooked rice can substitute with quinoa
  • 1 cup cucumber (chopped) can substitute with bell pepper
  • 1 cup cherry tomatoes (halved) can use any diced tomato
  • 1/2 cup red onion (sliced) green onions can be a milder alternative
  • 1/2 cup kalamata olives (halved) can swap with green olives
  • 1/2 cup feta cheese (crumbled) use crumbled goat cheese for a different flavor
For the Tzatziki Sauce
  • 1/2 cup tzatziki sauce Greek yogurt with cucumber and dill can be a homemade alternative
  • 2 tablespoons parsley (chopped) fresh herb garnish

Method
 

Marinating and Cooking Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken breasts and let marinate for 15 minutes.
  2. Heat a skillet over medium heat. Cook the marinated chicken for 5–7 minutes on each side until fully cooked. Let it rest for a few minutes before slicing.
Preparing the Bowls
  1. Warm the cooked rice in a small pot for 3–5 minutes until heated through.
  2. Slice the rested chicken into strips and layer over the warm rice in serving bowls.
  3. Top each bowl with chopped cucumber, cherry tomatoes, sliced onion, and olives.
  4. Drizzle tzatziki sauce over each bowl and garnish with chopped parsley before serving.
