Marinating and Cooking Chicken
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken breasts and let marinate for 15 minutes.
- Heat a skillet over medium heat. Cook the marinated chicken for 5–7 minutes on each side until fully cooked. Let it rest for a few minutes before slicing.
Preparing the Bowls
- Warm the cooked rice in a small pot for 3–5 minutes until heated through.
- Slice the rested chicken into strips and layer over the warm rice in serving bowls.
- Top each bowl with chopped cucumber, cherry tomatoes, sliced onion, and olives.
- Drizzle tzatziki sauce over each bowl and garnish with chopped parsley before serving.
