  • 1 lb Ground Chicken Use dark meat for richer flavor
  • 1 medium Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1/2 cup Cilantro Chopped
  • 1/4 cup Mint Chopped
  • 1 large Egg Can substitute with flax egg
  • 1/2 cup Breadcrumbs Panko preferred
  • 1 tsp Ground Cumin Fresh
  • 1 tsp Ground Coriander Fresh
  • 1 tsp Smoked Paprika Regular paprika can be used
  • 1/4 tsp Cayenne Pepper Optional
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Pepper Adjust to taste
  • 2 tbsp Olive Oil For cooking
Garlic Yogurt Sauce Ingredients
  • 1 cup Greek Yogurt Can substitute with sour cream
  • 1 tbsp Lemon Juice Fresh
  • 1 tbsp Fresh Dill Chopped
Garnishing
  • 1/4 cup Fresh Parsley Chopped
  • 4 pieces Pita Bread Or serve with rice

Method
 

Preparation
  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, chopped cilantro, and fresh mint. Add in the egg, breadcrumbs, ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and pepper. Gently mix with your hands until just combined.
  2. To ensure the perfect flavor, cook a small test patty in a skillet over medium heat with a drizzle of olive oil for about 2-3 minutes on each side. Taste and adjust seasoning if necessary.
  3. Wet your hands with water to prevent sticking, and shape the mixture into elongated kofta, approximately 1.5 to 2 inches long.
  4. Chill the shaped kofta for at least 30 minutes to firm up and meld flavors.
  5. Heat a skillet with olive oil over medium heat and cook the kofta for about 2-3 minutes on each side until browned.
  6. Turn the kofta to brown all sides evenly for about 10-12 minutes.
  7. Reduce heat to low, cover, and let them cook for an additional 8-10 minutes to ensure they are fully cooked through.
  8. In a separate bowl, combine Greek yogurt, minced garlic, lemon juice, drizzle of olive oil, chopped dill, salt, and pepper. Mix well until smooth.
  9. Arrange the cooked Chicken Kofta on a large platter, drizzle the garlic yogurt sauce over them, and garnish with fresh parsley.
