- In a small mixing bowl, mash the avocado with lemon juice, adding salt and pepper to taste until smooth.
- Spread mayonnaise or aioli on one side of each slice of bread. Layer the avocado mixture, shredded chicken, and cheese on one slice, then top with the second slice.
- In a skillet over medium heat, melt butter. Place the sandwich in the skillet and grill for 3-4 minutes until golden brown, then flip and cook the other side.
- Remove from skillet, let cool slightly, and slice in half. Serve hot.
