  • 0.5 cups Granulated Sugar
  • 0.5 cups Amaretto Liqueur or almond extract for non-alcoholic
  • 0.5 cups Cherry Juice 100% tart cherry juice
For the Cream Layer
  • 1.5 cups Heavy Cream
  • 0.5 cups Powdered Sugar
  • 8 ounces Mascarpone Cheese avoid low-fat versions
  • 1 teaspoon Vanilla Extract
For the Assembly
  • 24 pieces Ladyfinger Cookies Savoiardi-style preferred
  • Cocoa Powder or Grated Dark Chocolate optional topping

Method
 

Step-by-Step Instructions
  1. In a medium saucepan over medium heat, combine fresh or frozen cherries, granulated sugar, and half of the amaretto. Cook for 5 to 7 minutes until soft.
  2. Once done, remove it from the heat and let it cool slightly.
  3. Stir in the remaining amaretto and cherry juice, then set aside while preparing the cream layer.
  4. In a large mixing bowl, whip heavy cream with powdered sugar until soft peaks form. In another bowl, mix mascarpone and vanilla until smooth, then fold in whipped cream.
  5. Dip ladyfinger cookies quickly into the cherry-amaretto mixture, arranging them in a single layer in the dish. Spread half the cream over, then half the cherry mixture. Repeat layering.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  7. Dust the top with cocoa powder or dark chocolate before serving.
