For the Chicken
  • 2 cups cooked chicken breast use leftover or rotisserie chicken
For the Salad
  • 6 slices bacon can substitute with turkey bacon
  • 4 cups romaine lettuce or any leafy green
  • 1 cup cherry tomatoes can substitute with diced tomatoes
For the Dressing
  • 1/2 cup mayonnaise can consider using Greek yogurt
  • 1/4 cup Greek yogurt optional for extra creaminess
  • 1 tablespoon Dijon mustard adjust quantity to taste
  • 1 teaspoon garlic powder or use fresh garlic
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons fresh lemon juice or vinegar if needed

Method
 

Steps
  1. Cook the bacon in a large skillet over medium heat for about 8-10 minutes until crispy, then crumble it into bite-sized pieces.
  2. In the same skillet, cook the chicken breast for 6-8 minutes per side until browned, then dice it after cooling slightly.
  3. Whisk together mayonnaise, Greek yogurt, Dijon mustard, garlic powder, lemon juice, salt, and pepper until smooth.
  4. In a large bowl, toss together romaine lettuce, cherry tomatoes, diced chicken, and crumbled bacon. Pour the dressing over and mix until coated.
  5. Serve the salad in bowls or plates, optionally topping with avocado or cheese.
