  • 1 cup Fresh Cranberries Dried cranberries can also be used
  • 1/4 cup Honey Consider using orange blossom honey
For Garnishing
  • 1 teaspoon Ground Cinnamon Optional, nutmeg can be used
  • 6 leaves Fresh Mint Leaves Optional for presentation

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Halve the pears lengthwise and core each half, keeping the skin on.
  3. Place the pear halves cut-side up in the baking dish and dot with butter.
  4. Roast the pears for about 20 minutes until fork-tender.
  5. Combine cranberries and honey in a saucepan, simmer for 8-10 minutes until softened.
  6. Spoon goat cheese into each pear half and top with cranberry mixture.
  7. Garnish with cinnamon and mint leaves, then serve warm.
